Tomato Sauce

Tomato sauce, the kids like pasta , well I love it to , but try to stay away from it , older i get ,more difficult it is to loose weight.... :-( but this is the way i make regular tomato sauce, very easy, and very good..... there is only some olive oil, with onion , plain tomato sauce crushed, concentrated vegetable broth ,a glass of dry vino... and some water... bring to a boil for 20 min. or so, and there you are... i hope you like it.... Arriba Mexican Grill

Ciao everyone, i know you are going to tell me that i don't cook anymore , but trust me i still do , the only different thing happening is that my mom and Dad are here so we are going out more often , but in a few days they are going to go home again (:-) ...) so i will go back on the cooking.... but here we where in Phoenix to go and get Franco so we spent the night there and my friend Cinzia took us out to eat at this Mexican restaurant, wow did you see the super Margaritas... they where BIG.......!!! i love you all, have fun my friends ciao from your amica Dolly......

Dinner out....

Hi everyone, it is a few days , that i am gone, my mom and dad are here visiting and I have been busy.. you know how it is..... but I got to go out with my friends here , it was nice , but the thought that 3 of them are going to leave is not that nice.... the place that we went to , was very nice, not elegant but characteristic...... the food is very elaborate and pretty to look at , good to I have to say , some of us had lasagna, (not me.... :-).....), me and Karen had crepes with ricotta and spinach, Manu had shrimps and a wanna be caprese... and the best part was the dessert, we got many and shared them all I can say... I hope that you all enjoy the pictures , and please know that I will miss my friends, but they will always be in my heart..., ciao from your Italian friend Dolly.....

Pizza night

Since i learned how to make the pizza dough , my friends love to come and eat home made pizza.... so i try to make different pizzas all the time, and this time i made a pizza called puccia, it is very simple, you make the dough and leave it nice and hi when you put it in the pan, then grab some little tomatoes and just brake them so the juice comes out put them on the pizza and then get garlic cut it in pieces and put the pieces between the tomatoes, put oregano and 6-8 spoons of olive oil on it, in the oven for 20 min. or until you like it it is good and simple, it is good even to eat it like bread with pastas or salads... your pick... For dessert we had oatmeal chocolate cookies , my friend Trixie mad them , i loved them , never had them and they are easy to make, so i will try one day to make them...will let you know...

Eggplant experiment

Hi everyone, i am a little tired these days , my mom is coming to visit and i am cleaning the house and getting everything ready so i don;t have to do lot's when she is here, and we can spend time together, so i had some grilled eggplant left from the day before(they where grilled , with some salt ,olive oil and garlic on ), so i just tryed to use them in a different way , i love to experiment.. nothing that anyone didn't already did , but i never made it and i didn't have a recipe, so i went by ear... i got the left over eggplants and I layed them down and put some cheese and ham in them and rolled them up put them in a pan and put tomato sauce and a very little on salt in the oven for 20 min. on 350 f. just the time to melt the cheese and it is ready, well let me say Kurt is not a really big fan of eggplant, he eats them but... when i made them like this he really liked them ,then i had some pasta with Italian pesto and a mixed salad. i hope you enjoy, I will see you soon, ciao Dolly.

Cooking Contest

ME AND JOHN HAD A COOKING CONTEST , WELL NOT A REAL ONE, BUT I INVITED HIM AND HIS FAMILY OVER FOR DINNER , SINCE I MADE BEEF STEW , BUT HE HAD ALREADY COOKED HIS CHILI, SO I JUST TOLD HIM TO BRING IT OVER MY HOUSE AND WE COULD EAT EVERYTHING ... WELL LET ME TELL YOU IT WAS A GOOD DINNER...I DON'T KNOW HOW HE MADE HIS CHILI BUT MY STEW WAS MADE HOW MY MOM MAKES IT , THE ITALIAN WAY, VERY SIMPLE... OLIVE OIL IN A PAN WITH ONION, GARLIC AND CARROTS, FRY FOR 1 MIN. THEN ADD THE MEAT, COOK IT UNTIL IT IS NO LONGER RED , AT LEAST FOR 10 MIN. TURNING IT, ADD A GLASS OF RED DRY WINE AND LET IT EVAPORATE , THEN ADD THE TOMATO SAUCE , SALT BAY LIFE AND BROTH(VEGGIE BROTH ) 3 CUPS OF WATER AND LET IT COOK ON LOW FOR 3 HR.S , ADD THE POTATOES 30 MIN. BEFORE THE YOU THINK IT IS READY, THE MEAT NEEDS TO BREAK VERY EASY, THAT IS THE READY TOUCH... WELL I HOPE YOU LIKE IT, CIAO FROM DOLLY, YOUR ITALIAN FRIEND.....

Road trip


Sunday we decided to take a road trip , we looked in a book that we have , a friend gave it to us as a good bye gift , when we left Germany and it is called Weird Arizona,and we found a weird place to go look at in Amado near the border of Mexico and we went there to see this restaurant that had a skull so here it is , if you have a chance go see it it is really big and nice, and the people that are there are very friendly, well my friends it is time for me to go to bed , have a nice evening or day depending of where you are in the world, ciao Dolly.... :-)











Spanish dinner

Well, most of you , know that my hubby is from Costarica - Cuba so i have to learn how to make some of his traditional food, (I love it to...) . So I am learning how to make Seviche, it is a really good and fresh dish , it is supposed to be made with white fish but i use shrimp, because i eat it like that and it was actually good... but it is a long process to cut up all the ingredients... :-)
after i made Spanish rice , black beans and tamales, well those where frozen.... :-) I'm not that good...:-), i hope you like it, i really do, let me know, until then I love you all like always , and ciao from your Italian friend, Dolly.
